Chocolate and Cream Cheese Tunnel Cake

This is a rich chocolate cake with a tunnel of cream cheese running through it. The cake itself is very moist due to the addition of yogurt. It may look complicated, but it only takes a few simple steps to make this delicious cake.

Ingredients are as follows:

Cake:
2 C sugar
1 3/4 C flour
3/4 C cocoa
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 eggs
6 ounces Greek yogurt (or sour cream)
1/2 C oil
2 tsp. vanilla
1 C hot coffee (or hot water)

Filling:
8 ounces cream cheese, softened
2 eggs
1/2 C sugar
1/4 C flour
1 tsp. vanilla

Directions:

Pre-heat oven to 350 degrees; grease and flour a nine inch tube pan. 

Put sugar, flour, cocoa, baking powder, baking soda and salt in a bowl. Mix until combined.


Add the eggs, yogurt, oil and vanilla. Mix again.


Once the dry and wet ingredients are mixed together, slowly pour the hot coffee in and mix (by hand or else you'll have a big mess) until incorporated.


Pour chocolate batter into prepared tube pan; set aside. Now cream together the cream cheese, eggs, sugar, flour and vanilla.


Pour the cream cheese mixture on top of the chocolate batter. Do not mix, this will sink during baking, giving you the "tunnel" effect.


Bake in pre-heated oven for 50-55 minutes, or until a tooth pick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes.  Remove from pan and flip it right side up so your cream cheese tunnel is on top.


Slice, serve and enjoy!

  12. That looks amazing! I had a Latin teacher in high school that would add sour cream to her cookies to make them moist--sounds like the yogurt here does the same thing :)

  34. I don't have a tube pan. Could I use my bundt cake pan instead? Would I have to change baking time and temp??
