When I saw fresh blueberries at the store I knew it was time for dessert! I love blueberries and I thought what better way then to pair them up with my old favorite cream cheese! This cake is deliciously moist, not too sweet and simple to prepare. I garnished it with some cream cheese icing and a handful of fresh blueberries. It is to die for!
Ingredients are as follows:
1 C butter
1 3/4 C sugar
2 eggs
8 ounces cream cheese, softened
2 tsp. vanilla
1 3/4 C flour
1 tsp. baking powder
1/4 tsp. salt
1 cup of fresh blueberries
1 Tbsp. flour
Directions:
Preheat oven to 350 degrees; grease a 9" tube pan.
Preheat oven to 350 degrees; grease a 9" tube pan.
Cream together the butter and sugar until light and fluffy.
Beat in the eggs, one at a time.
Mix in the cream cheese and vanilla; stir until smooth and creamy.
By hand, fold in the flour, baking powder and salt. Set aside.
Gently fold blueberries into the batter.
Pour batter into the greased pan.
Bake in preheated oven for 50-55 minutes or until golden brown. Cool in pan for ten minutes then remove from pan.
Garnish with some cream cheese icing and fresh blueberries.
Slice, serve, and enjoy!
