Almond Joy* Brownie Bites

Almond Joy* candy bars are a delightful little treat, but what happens when you're in the mood for one and you don't have any?  You make Almond Joy* Brownie Bites!  These are the perfect snack to take that craving away.  First there is a chocolate fudge brownie base that's topped with sweetened coconut.  Then drizzle on some chocolate, sprinkle on some almonds and it's perfect.   So simple and oh so delicious!

Print Friendly and PDF
Ingredients are as follows:

1 box of family size Chocolate Fudge brownie mix
1 (14 oz.) can sweetened condensed milk
1 (14 oz.) bag coconut
1/4 C milk
1 C chocolate chips, melted
1/4 C almonds (or nuts), crushed

Directions:

Preheat oven to 350 degrees.  Line (regular size, not mini) cupcake pan with paper liners.  (Don't skip the paper liners, I did the first time and they all stuck!  This recipe makes 24 brownie bites, however I'm only showing 12).

Make brownies according to package directions and pour batter only half way up the liners.

Bake in preheated oven for 12 minutes.  While they are baking, mix the coconut, sweetened condensed milk and milk together.

Remove brownies from oven and spoon on some sweetened coconut.

Place back in oven and continue to bake an additional  14-16 minutes.

Remove from oven and allow to cool completely before removing the paper liners. Drizzle on the chocolate then sprinkle on the almonds.

Take a bite and enjoy!

    1. These were made with a regular size cupcake pan, not mini. I've never made them with a mini cupcake pan either so unfortunately I can't say how long they would take to bake or how many the recipe would yield.

  64. I saw this recipe on a cousin's facebook and she turned me on to Flour Me with Love. I made the almond joy brownie bites and it was a hit with my family. I have had to make it twice in the last two weeks!!!

  65. i'm using the tin foil liners, lisa do you think they'll work? also, i only yielded 16! i filled the cups half way, but they rose quite a bit so next time i'm going to do only one teaspoon instead of two teaspoons per liner. and then of course i had too much coconut mixture. oh well! they look and sound amazing, thanks for sharing :)

    ReplyDelete

    1. I'm sure the tin foil liners will be fine. Yes, be careful not to fill them too full. I hope you enjoyed them :)

  66. oh my goodness, my entire office loved them. i didn't get 24 oddly enough and the brownies stuck a bit to the foil liners, but overall just great. i'm making them again right now, using paper liners this time :) still didn't get 24, guess i'm using too much brownie mixture. i also mixed the almonds into the coconut mixture because there weren't enough nuts for me ;)

  68. I made these today. I opted to used ghiradelli brownie mix (our favorite). However...they stuck to the cupcake liner. Next time if I use the ghiradelli mix I'll opt for the foil liners. Other than that they taste fabulous!

  69. Have you ever toasted the coconut before mixing with the condensed milk?

    1. You can always spray the liners first, or even use foil and spray them. Plus make sure they are completely cooled before you remove the wrapper and you should be good :) I'm so happy you enjoyed them...thank you!
