Ingredients are as follows:
1 box of family size Chocolate Fudge brownie mix
1 (14 oz.) can sweetened condensed milk
1 (14 oz.) bag coconut
1/4 C milk
1/4 C milk
1 C chocolate chips, melted
1/4 C almonds (or nuts), crushed
Directions:
Preheat oven to 350 degrees. Line (regular size, not mini) cupcake pan with paper liners. (Don't skip the paper liners, I did the first time and they all stuck! This recipe makes 24 brownie bites, however I'm only showing 12).
Make brownies according to package directions and pour batter only half way up the liners.
Bake in preheated oven for 12 minutes. While they are baking, mix the coconut, sweetened condensed milk and milk together.
Remove brownies from oven and spoon on some sweetened coconut.
Place back in oven and continue to bake an additional 14-16 minutes.
Remove from oven and allow to cool completely before removing the paper liners. Drizzle on the chocolate then sprinkle on the almonds.

These look like absolute brownie bliss. They made the Top 5 for Sweets for a Saturday.
ReplyDeleteI dont use premade mixes but i wll try this with my normal recipe.
ReplyDeleteThese look delicious! One question, though: are you using mini muffin tins or full-size? They look big for brownie bites!
ReplyDeleteMy Pastor's wife makes a Almond Joy Cake, wonderful as well, so we will be adding this recipe to our collection. Going to make it this weekend.
ReplyDeleteI am going to test this recipe tomorrow during the hurricane for my daughter's wedding dessert table. I'm confused over why you would use peanuts instead of almonds, but they look beautiful. I'll be substituting almonds.

ReplyDeleteHi Andrea,
DeleteI used sweetened coconut :)
OMG have mine in oven now
ReplyDeleteTHESE ARE SOOO GOOD
ReplyDeleteHi Lisa, Your Almond Joy Brownie Bites is one of my top 3 for the Iron Chef Mom Chocolate Challenge....Yum! Voting for your recipe and pinning! Good luck!
ReplyDeleteThe brownies look so good. I will give them a try one of these days :)
ReplyDeletecan you use the mimi cupcake pan for these? kayprofitt@comcast.net
ReplyDeletesorry I meant mini ?
ReplyDeleteThese were made with a regular size cupcake pan, not mini. I've never made them with a mini cupcake pan either so unfortunately I can't say how long they would take to bake or how many the recipe would yield.
DeleteIs there unsweetened coconut cuz I only found sweetned coconut is it okay to use it...
ReplyDeleteRuby I use sweetened coconut and it turns out perfectly!
DeleteI saw this recipe on a cousin's facebook and she turned me on to Flour Me with Love. I made the almond joy brownie bites and it was a hit with my family. I have had to make it twice in the last two weeks!!!
ReplyDeletei'm using the tin foil liners, lisa do you think they'll work? also, i only yielded 16! i filled the cups half way, but they rose quite a bit so next time i'm going to do only one teaspoon instead of two teaspoons per liner. and then of course i had too much coconut mixture. oh well! they look and sound amazing, thanks for sharing :)
ReplyDeleteI'm sure the tin foil liners will be fine. Yes, be careful not to fill them too full. I hope you enjoyed them :)
Deleteoh my goodness, my entire office loved them. i didn't get 24 oddly enough and the brownies stuck a bit to the foil liners, but overall just great. i'm making them again right now, using paper liners this time :) still didn't get 24, guess i'm using too much brownie mixture. i also mixed the almonds into the coconut mixture because there weren't enough nuts for me ;)
ReplyDeleteI'm so happy to hear that everyone liked them! Thanks for letting me know about the foil liners :)
DeleteYUM-O! Thanks for sharing this recipe at the Shady Porch Rock 'N Share! Hope to see you again soon! Blessings, D@TheShadyPorch P.S. Shared your recipe on FB page...it was a hit!
ReplyDeleteI made these today. I opted to used ghiradelli brownie mix (our favorite). However...they stuck to the cupcake liner. Next time if I use the ghiradelli mix I'll opt for the foil liners. Other than that they taste fabulous!
ReplyDeleteI'm so happy you enjoyed them :)
ReplyDeleteHave you ever toasted the coconut before mixing with the condensed milk?
ReplyDeleteNo I haven't, but I'm sure it would taste good.
ReplyDeleteI heart Almond Joys. They're like my fave of all time candy! I must try your brownie bites! Thanks for sharing at Saturday Night Fever!
ReplyDeleteI have to tell you that these are AMAZING !! I found your recipe on face book . My daughter made them they are so good !! thank you so much for sharing !! Try them you will love them !!
ReplyDeleteI made these and they were tasty but I lost half of each one to the paper liner. Any thoughts?
ReplyDeleteYou can always spray the liners first, or even use foil and spray them. Plus make sure they are completely cooled before you remove the wrapper and you should be good :) I'm so happy you enjoyed them...thank you!
