No-Bake Apricot Cheesecake


Here is another quick and easy dessert that doesn't require baking (it's still hot here!) and it's great for the kids to help out in the kitchen.  My daughter pretty much made the entire recipe by herself and it was great quality time together!  One nice thing about this recipe is that you can swap out the apricot preserves for whatever flavor you prefer.



Ingredients are as follows:

Crust:
1 ¾ C graham cracker crumbs 
½ C butter, melted

Filling:
8 ounces cream cheese, softened
14 ounce can sweetened condensed milk
1 tsp. vanilla

½ C apricot preserves

Directions:

Grease a 9" springform pan; set aside.


Mix graham cracker crumbs and melted butter together until combined.


 Press into prepared pan and set aside.


Beat the cream cheese, milk and vanilla together until smooth.


Pour into prepared crust.  


Heat preserves in microwave for one minute then swirl into batter.


Place in the refrigerator for a few hours (or overnight) to set up.

Slice, serve and enjoy!
