Pink (for the cure) Poke Cake

 

October is Breast Cancer Awareness Month and as an effort to help raise awareness, Eggland's Best is once again teaming up with Susan G. Komen to help find a cure.  From now until November 15th, Eggland’s Best will be turning their infamous red “EB” stamp into a pink “EB” and stamping a Susan G. Komen Running Ribbon on as well.  



Right now, in the U.S. there are more than 2.5 million breast cancer survivors!  This is a result from early detection and proper treatment!  In the past year, with the help of companies like Eggland’s Best, Susan G. Komen for the Cure has been able to invest $75 million in research, as well as provide more than 600,000 women with free screenings and over 100,000 with treatment assistance. 

 
If you're unsure about the signs of breast cancer or just need more information please visit  Susan G. Komen.  It will answer any question or concern you may have.  If you'd like to help raise awareness, you can!  It's as simple as buying products that contribute to the Susan G. Komen for the Cure foundation.  To start you off, Eggland's Best has graciously offered one of my readers a coupon for a free dozen of eggs plus an eco bag, a plush egg and a spatula!  See giveaway details below.


I was also asked if I'd like to contribute a recipe using Eggland's Best Eggs and of course I said yes!  My daughter has been wanting to do a jello poke cake for quite some time and we've never gotten around  to it, so I thought this would be the perfect time! 

Ingredients are as follows:

2 C sugar
1 C butter, softened
4 Eggland's Best eggs
3 C flour
4 tsp. baking powder
1 1/2 C milk
2 tsp. vanilla

1 (3 oz.) package strawberry jello
1 C boiling water
1/2 C cold water

Directions:

Preheat oven to 350 degrees; grease two 9 inch round baking pans.


Beat together the butter and sugar until light and fluffy.


Beat in eggs, one at a time, until completely incorporated.


Combine 2 C of the flour and baking powder. Fold in by hand.  


Stir in milk and vanilla.


Gently fold in the last cup of flour.


Pour batter into prepared pans and bake for 25-30 minutes.  Cool cake in pans for 15 minutes.  While they're cooling mix the boiling water and jello together, slowly stir in cold water; set aside.  Randomly poke holes into your cake and pour jello over the top.


Place in the fridge for a few hours.  Remove from pans and frost with cream cheese frosting.  


Slice, serve and enjoy!

  21. Hi Lisa! This is great because my daughter's bday is this month and I was just about to look up some strawberry cakes... her request! Didn't have to look too far!
