The wonderful folks at Gooseberry Patch once again asked me to review their newest cookbook called Rush-Hour Recipes and it is great! There are more than 230 recipes that can be made in very little time. I know so many people are busy these days so this is the perfect cookbook to help you out!
I decided to make the Pineapple Sheet Cake and it turned out delicious!
2 C flour
2 C sugar
2 tsp. baking soda
1 tsp. vanilla
2 eggs, beaten
20 ounce can crushed pineapple (do not drain)
Optional: chopped pecans
Cream Cheese Frosting:
8 ounces cream cheese, softened
1/2 C margarine (I used butter), softened
1 tsp. vanilla
1 C powdered sugar
Directions:
Preheat oven to 350 degrees. Grease a 15" x 10" jelly-roll pan.
Mix together the flour, sugar, baking soda, vanilla, eggs and pineapple.
Spread batter into prepared pan.
Bake 25-30 minutes or until a toothpick comes out clean. While the cake is baking, cream together the cream cheese, margarine (or butter), vanilla and powdered sugar.
Spread on the cake (I then put mine in the fridge to get it nice and cold).
Slice, serve, and enjoy!
To go along with this wonderful cookbook I've included a 3 quart mixing bowl, a spatula, a whisk, and a set of cute hot pads!

I have had many a 'rush hour' when my two boys were growing up and I was working full time as a teacher. Today, i find myself temporarily disabled and awaiting surgery to give back mobility to my legs. I have found that the quick and easy recipes are usually the ones i can handle in this condition as I continue to cook for my household. This cake is similar to one they make down here in NC called "Pig Pickin' Cake". No pig pickin' would be complete without it, and it's welcomed at every party, pig pickin' or not! VERY popular and VERY good. This one sounds easier and just as yummy! Thanks!
