Moist, Delicious & Easy Banana Bread


I always seem to have a banana that doesn't get eaten, goes brown then gets tossed into the freezer.  Once I get a few in there I always make this banana bread.  The addition of sour milk makes it so moist, it's made in one bowl, stirred by hand and it always turns out! It really is one of the simplest recipes and it's always so delicious!



Ingredients are as follows:

1/4 C milk
1 tsp. lemon juice, or white vinegar
1/2 C margarine, softened
1 tsp. vanilla
1 1/4 C brown sugar
2 eggs
2 C flour, divided in half
1 tsp. baking soda
dash of salt
1 C mashed bananas (I mash mine in the peel so I don't dirty another dish!)

Directions:

Preheat oven to 350 degrees; grease a 9 x 5" pan. 


In a small bowl combine the milk and lemon juice; set aside.

  
Cream together the margarine, vanilla and brown sugar.



Beat in the eggs.


Stir in one cup of the flour.


 Then mix in the sour milk and mashed bananas.


Stir in the other cup of flour, baking soda and salt.


Mix until combined; do not over mix! 


Pour into prepared pan.


Bake for 55-60 minutes; until golden brown.


Allow to cool for 10 minutes, remove from pan then slice.


Put some butter on and enjoy!

  1. OOO - I love banana bread. The melting butter in your first photo makes my mouth water! My favorite banana bread recipe has sour cream too - always makes it soo moist and delicious.

  13. LOVE THE RECIPE AND THE WAY YOU MADE BUTTERMILK BY ADDING THE LEMON JUICE TO THE MILK. I DO IT ALWAYS SINCE I NEVER HAVE BUTTERMILK IN MY FRIG. THANKS.
