Nutella & Cream Sandwich Cookies



In our house, we love nutella!  We like it on toast, pretzels, apples, straight from the jar...you get the point ;)  Since the kids started school this week, I wanted to make them a special treat.  I knew if it had nutella in it, it would be a hit!  I came up with these cookies that have nutella in the dough and the cream center.  The cookies are a little crispy on the outside and chewy on the inside.  Then you have the creamy nutella and peanut butter center that holds two of the cookies together.  A perfect way to welcome in the new school year!



Ingredients are as follows:

1/2 C butter, softened
1 C sugar
1 egg
1 tsp. vanilla
3/4 C Nutella
1/2 tsp. baking soda
1/4 tsp. baking powder
1/8 tsp. salt
2 1/4 C flour 

filling:
1/2 C Nutella
1/2 C creamy peanut butter 

This recipe yields about 17 sandwich cookies.



Directions:

Preheat oven 350 degrees; grease cookie sheets.  


Cream the butter and sugar together.


Mix in the egg and vanilla.


Stir in the nutella.


Mix in the baking soda, baking powder, salt and flour.


Take about a tablespoon of dough and roll it into a ball.   Place it on a greased cookie sheet. Repeat with remaining dough.


Bake for 15-17 minutes; until crispy around the edges.


Let them cool for a few minutes on the tray before removing.  While they're cooling mix together the nutella and peanut butter.


Spread some filling in between two cookies and sandwich them together.


Take a bite and enjoy!

  17. Do yours come out soft or crunchy? I made these, and I love the flavor, but they are so hard/crunchy. I even baked them less time than you said. I'm not sure what to do. I think they would be so much better if they were soft!! I think I would add peanut butter to the dough next time too.

    1. Mine were crunchy on the outside and chewy on the inside. I did have a few leftover and they got softer the next day. You could always add a slice of bread to your container that you package them in and they would soften up too :)
