Chocolate Chip Cookie Dough Cheesecake Bars




I saw these bars on Pillsbury and have been wanting to make them for quite some time.  I love cookie dough and cream cheese so I knew they would be divine!  Then my good friend Stephanie from Back for Seconds asked if I'd like to help celebrate the launch of her new site...she's a dot com now so of course I said yes!  If you haven't been to her site, make sure you do because she has so many wonderful recipes and her pictures are always beautiful!  While you're there, you'll get to see all the other wonderful blogs that are helping her celebrate too!  I knew these bars would be the perfect way to celebrate; they're simple to make, they taste delicious and would be great for any party!  



Ingredients are as follows:
recipe adapted from Pillsbury

1 (16 ounce) ready-to-bake chocolate chip cookies (24 cookies in a package)
8 ounces cream cheese, softened
1/2 C sugar
1 egg
1 tsp. vanilla

Directions:

Preheat oven to 350 degrees; grease an 8" square pan.


Press 16 cookies onto the bottom of the greased pan.


Cream together the cream cheese, sugar, egg and vanilla.


Pour on top of the raw cookie dough.


Break the remaining 8 cookies into tiny pieces and sprinkle on top.


Bake for 30-35 minutes; until golden brown around the edges.


Allow to cool in the fridge for two hours.  Slice, serve and enjoy!

  5. I thought these would be a great dessert to make in order to cope with the cabin fever I'm experiencing as a result of Hurricane Sandy. I went to the local market and it is still not replenished since before the storm. So they were out of ready-made chocolate chip cookie dough. No problem, though, they had chocolate chips so I made my own cookies. I guess people stock up on ready-made cookie dough before a hurricane! Anyway, just took them out of the oven and they look and smell amazing!

    i made these but mine was more complicating whereas i actually made the cookie dough from scratch. It tasted good because why wouldn't it (cheesecake, cookie dough.. who doesn't love that?) however next time I'm gonna do it your way and use refrigerated cookie dough. it will be much easier and might even taste better. i love pillsbury cookie dough. i realize now that the recipe i had used didn't call for egg in the cookie dough to be more safe. but you bake the dough so hello.... it could've had an egg and would've been just fine
