While I was looking up on how to incorporate avocados, I found the Share the Avocado Love Facebook app. It's so cute because you can send virtual gifts like avocado slices and guacamole. I sent some to my sister as a little treat! You can also download ringtones, wallpaper, and even screen savers.
Plus there is an entire Avocados from Mexico Cafe Press store. I ordered a T-shirt like the one above, however it hasn't arrived yet. As soon as it does, I'll post a picture...now onto the recipe!
Cupcakes:
2 C cake flour
1 C sugar
1/2 C cocoa powder
2 tsp. baking soda
dash of salt
2 tsp. vanilla
1 C mashed avocado
1 C warm water
Peanut Butter Icing
1/2 C butter, softened
1 C creamy peanut butter
2 C powdered sugar
2-3 Tbsp. milk
Directions:
Preheat oven to 350 degrees; line cupcake pan with liners.
Place flour, sugar, cocoa, baking soda, salt, vanilla and avocado into a bowl.
Mix until incorporated; pour in the water.
Mix until combined.
Bake 18-20 minutes; until a toothpick comes out clean. Set aside to cool.
Whip the butter and peanut butter until creamy.
