Strawberry (filled) Shortcake Tarts





I love this time of year when all the fresh fruit is on sale.  Our kids love fruit so I bought a ton of strawberries, blueberries, watermelons, and kiwi the other day.  Plus I couldn't wait to come up with some new desserts!  First up are these cute little strawberry shortcake tarts.  They are little shortcakes filled with sweetened strawberries, topped with cream cheese icing and a chocolate drizzle.  They're delicious and simple to make too!  With the warmer weather here I don't like to spend hours on dessert; you can whip these up in no time!


Ingredients are as follows:

4-6 strawberries, diced small
1 Tbsp. sugar


shortcakes:
 1 C flour
1 tsp. baking powder
1/4 tsp. salt
1/2 C sugar
3 Tbsp. cold butter
1 tsp. vanilla
1/2 C sour cream

icing:
4 oz. cream cheese, softened
1/4 C powdered sugar
1 tsp. vanilla

chocolate drizzle:
1/8 C semisweet chocolate chips
1 tsp. shortening 


Directions:

Preheat oven to 350 degrees; spray a mini cupcake pan with cooking spray. 


In a bowl, mix together the strawberries and sugar; set aside.


Mix together the flour, baking powder, salt and sugar.


Cut in the cold butter until crumbly.


Mix in the vanilla and sour cream.


Evenly divide the dough into the mini cupcake pan.


Bake for 16-18 minutes; until golden brown.  Remove from oven.  Take a wooden spoon handle and poke it down into the center of the tarts.  Set aside and allow them to cool completely.


Cream together the cream cheese, powdered sugar and vanilla; set aside.


Remove tarts from the pan and fill with the strawberries.


Pipe on the cream cheese icing.


Melt the chocolate chips and shortening together (I did mine on low in the microwave).


Drizzle the chocolate on top of the tarts. 


Take a bite and enjoy!
