Peach Slab Pie

 
 


I'm always looking for quick and easy recipes.  Our schedules are so busy with the kids and there are times when I don't have the time to prepare an in depth recipe.  The other day we were craving something sweet, but I didn't have a lot of time or really any idea as what to make.  I looked in the cupboard, saw a can of peach pie filling and decided to make this simple and delicious peach slab pie.  It comes together in a matter of minutes and in no time you have dessert!

Ingredients are as follows:

2 refrigerated pie crusts
1 (21 ounce) can peach pie filling
1/4 C brown sugar
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1 tsp. lemon juice 
1 Tbsp. flour

topping:
1/2 C flour
1/4 C brown sugar
1/2 C oats
1/8 tsp. cinnamon
1/4 C butter

icing:
2 ounces cream cheese, softened
1/4 C powdered sugar
1-2 Tbsp. milk


Directions:

Preheat oven to 350 degrees; grease an 11 x 15" cookie sheet.


Roll pie crusts out into a rectangle, place onto the cookie sheet; set aside.

Put peach pie filling into a bowl; dice up the peaches.  Add the brown sugar, nutmeg, cinnamon, lemon juice and flour.  Stir until combined.


Evenly spread the filling onto the pie crust.


Combine the flour, oats, brown sugar and cinnamon together.  Cut in the butter until the mixture is crumbly.


Sprinkle mixture evenly over the peaches.


Bake in preheated oven for 25-28 minutes, or until crust is golden brown.  While it's baking, mix together the cream cheese, powdered sugar and milk.
Remove pie from the oven, allow to cool a little then drizzle on the icing.
Slice, serve and enjoy!

  2. I want to try this. What happens if I skip the oats in the topping or is there something I could substitute? Me and my family are not fond of oats in pie or crisp toppings.

    1. You don't have to put the oat topping on at all, however I wouldn't skip the icing, that tops it off quite nicely!

  3. If you used say, apple pie ,would you still use the brown sugar?

    1. I've made an apple one too and didn't use the brown sugar, however you could if you wanted.

  9. This looks amazing! I do prefer cherries though. Do you think I could use cherry pie filling, and would I need to chop up the cherries?

    1. Cherries would work just fine! I like to chop them up just so they're easier to eat, however you don't have to :)

    1. I don't see a problem with that, just make sure you do add the flour to the mixture so it absorbs the extra moisture :)

  13. I used this recipe with cherry pie filling, it was wonderful, everyone loved it. If you don't want to make it as large as the recipe calls for just cut the recipe in half. You can use any type of canned pie filling with this recipe. I will certainly make it again and again using different pie fillings!
