Not Your Grandma's Ambrosia Salad

I love quick and simple desserts, and this one couldn't be simpler!  Our family loves fruit salad and once they tried ambrosia salad they liked the concept, not the marshmallows.  My family doesn't care for marshmallows in dessert salads so I came with my own recipe.  There's only five ingredients so you could even consider this one of those Five Cup Salads!  This makes a large batch which is perfect for my family, however you can always use the smaller cans of fruit and it will be creamier...which we sometimes do too!



Ingredients are as follows:

1 (6 lb 10 ounce) can of lite fruit cocktail (or 4-5 smaller cans)
2 (11 ounce) cans of mandarin oranges
8 ounces of low-fat cream cheese, softened
8 ounces of sugar free or lite cool whip
1 C powdered sugar 


Directions:


Dump fruit cocktail into a strainer and allow to drain.

Transfer to a large bowl; drain the oranges and toss them in; set aside.

Whip the cream cheese, cool whip and powdered sugar together.

Pour over the fruit and stir until it's thoroughly covered.

Serve and enjoy!
