Cake Batter Cookie Cups

Sometimes we all need a super simple dessert and these Cake Batter Cookie Cups are just that!  All you have to do is pick your favorite flavor of cake mix, add two ingredients, bake the cups and fill them with your favorite frosting.  Once it's all done you end up with a delicious, simple and cute dessert that you can make in a matter of minutes.  I told you it was simple...enjoy!

Ingredients are as follows:

cookie cups:
1 (16.5 ounce) cake mix (I used a funfetti cake mix)
1/2 C butter
2 eggs
  
 frosting:
12 ounces cream cheese
1 1/2 C powdered sugar
3/4 C heavy whipping cream
I made my cream cheese frosting and tinted it pink, however you can use whatever frosting you prefer!


Directions: 

Preheat oven to 350 degrees; generously grease a muffin/cupcake pan.


Melt the butter in the microwave or on top of the stove.


 Mix in the cake mix and eggs; stir until combined.


 Evenly divide the dough into 12 pieces and place in the prepared pan.


Bake for 15-18 minutes; remove from oven and make a "well" into the centers.  


Remove from pan and allow to cool completely.  Cream the cream cheese and powdered sugar together; slowly mix in the heavy whipping cream until fluffy.


I tinted my frosting pink, filled the cups & put a dash of sprinkles on too!

  3. I heard someone at a party talk about doing this but I didn't pay close enough attention. I can't wait to try this. I'm going to an Easter Monday party tomorrow and there will be quite a few kids. These will be a hit.
