Strawberry Cream Cheese filled Coffee Cake

 
In my house we love cheese!  I can pretty much put cheese on top of anything and enjoy it!  I also love to use cream cheese in my desserts and I'm always coming up with new recipes to use it in.  Since I love coffee cakes I decided to try and fill one with flavored cream cheese.  The cake is moist and delicious while the center is rich and creamy.  The combination is a perfect match! 



Ingredients are as follows:

cake:
1/2 C butter, softened
1 C sugar
3 eggs
1 tsp. vanilla
8 ounces greek yogurt
2 C flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt

filling:
8 ounces strawberry cream cheese
8 ounces plain cream cheese
3/4 C powdered sugar

Directions:

Preheat oven to 350 degrees; grease a 10 inch tube pan & sprinkle with sugar.

Cream together both cream cheeses and powdered sugar.  Reserve 1/3 C and set both aside.


Cream together the butter and sugar.


Add eggs in one at a time, mix until incorporated; set aside.


In another bowl whisk together the flour, baking powder, baking soda and salt.


Mix half of this flour mixture into the wet ingredients.  Mix in the vanilla and greek yogurt.


Stir in the other half of the flour mixture.


Spread half of the batter into the prepared pan.


Carefully spread the cream cheese mixture into the center of the cake.


Take the remaining batter and carefully spread it on top.


Bake for 35-40 minutes; until golden brown.


Allow to cool for 10 minutes then remove from pan.  Take the reserved 1/3 C of cream cheese mixture and add a tablespoon or two of milk to thin it out.  Drizzle on top of the cooled cake.

 

Slice, serve and enjoy!
