I have never had Irish Soda Bread, but we were having brisket for dinner the other night and I wanted to have something different with it. I looked up some recipes and found this simple one and decided to give it a try. I like how this recipe doesn't use any yeast so there's no waiting for it to rise. I am surprised at how easy this bread is to make and how delicious it is to enjoy!
Ingredients are as follows:
4 cups all-purpose flour
4 tablespoons white sugar
1 teaspoon baking soda
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1 cup buttermilk
1 egg
1 C raisins
Directions:
Preheat oven to 375 degrees; lightly grease a large baking sheet.
Mix together flour, sugar, baking soda, baking powder, salt & butter. Stir in buttermilk, egg & raisins. Turn dough out onto a lightly floured surface & knead slightly.
Form dough into a round; use a sharp knife to cut an 'X' into the top of the loaf.
Place onto cookie sheet and bake for 45-50 minutes; until a toothpick inserted into the center of the loaf comes out clean.

Don't you love this recipe? I make it every St. Pat's day. We live in Florida in the winter and so many people down there never heard of it so i made them a loaf.
ReplyDeletePut a slice in the toaster oven- then add some butter to the toast- super yum!
