Mornings can be quite hectic around here! I get up at 5am, get my husband off to work at 6am, get one set of kids up and get them off to school at 7:15am then get the other ones up and get them out the door at 8:10am. During those times I have to make sure everyone is fed with something that's quick, delicious and on the go. So when I was asked by The J.M. Smucker Company to create a unique recipe using the new Jif Peanut Powder I was happy to get started on a new breakfast treat that the whole family will enjoy!
I picked some up at my local Walmart and was happy to use my ibotta coupon to receive a $1.00 off! I was also very happy to see that it's 85% less fat than traditional peanut butter, 8 grams of protein per serving, and it's great for smoothies and baking. I decided to whip up some banana muffin bites and I added in some peanut powder too and they turned out exactly like I hoped they would. These muffin bites get my family off and on their way to a great day!
Ingredients are as follows:
1/3 C brown sugar
1 tsp. vanilla
1 1/4 C flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 C milk
1/2 C Jif Peanut Powder
Preheat oven to 350 degrees; grease a muffin pan.
Mix in the banana, brown sugar and vanilla.
Stir in the flour, baking powder, baking soda and salt.
Mix in the milk.
Add the Jif Peanut Powder and stir until combined.
Evenly pour into the muffin pan.
Bake for 20-25 minutes; until golden brown.
