I love seeing all the fresh strawberries at the store, and I love coming up with new recipes to use them in. This Strawberry Butter Crust Delight is unique and it's something I've never seen before. It starts with a butter crust that reminds me of a pie crust and shortbread combined in one. The delight is a rich, creamy sweetened sour cream and cream cheese mixture that has fresh sweet strawberries folded in, and to top it all off I took semi-sweet chocolate and drizzled it on top. This dessert doesn't require fancy ingredients, it comes together quickly, and it tastes amazing!
Ingredients are as follows:
1 1/4 C flour
2 Tbsp. sugar
1/4 tsp. salt
1/2 C butter, cold & cubed
1/4 C cream (or milk)
2/3 C sour cream
12 ounces cream cheese, softened
1 C powdered sugar
1 tsp. vanilla
2 C fresh strawberries, diced
1/4 C strawberries, diced
2 ounces semi-sweet chocolate, melted
Preheat oven to 350 degrees; grease a 11 x 15 inch cookie sheet.
Mix the flour, sugar, and salt together.
Cut in the cubed butter and mix until crumbly.
Mix in the cream and knead until the dough comes together.
On a floured surface, roll out the dough into a rectangle the size of the cookie sheet.
Transfer onto the cookie sheet and prick the dough with a fork.
Bake for 15 minutes; until the edges are golden brown. Set aside to cool.
Whip together the sour cream and cream cheese.
Whip in the powdered sugar and vanilla; mix until creamy.
Fold in the diced strawberries.
Evenly spread onto the cooled crust.
Sprinkle on the 1/4 C of strawberries and drizzle the chocolate on top.
Slice, serve, and enjoy!
