Blackberry Sour Cream Quick Bread

Quick breads are one of my favorite things to make, along with coffee cakes!  Both are simple to prepare, you can make so many flavor combinations and they taste delicious.  One of my favorite ingredients to add to coffee cakes and quick breads is sour cream; it makes them moist and enhances the flavors perfectly.  I couldn't wait to combine sour cream and blackberries and see how it turned out.  Well let me tell you, it is scrumptious!  This is such an easy recipe; all you have to do is mix everything up, toss it into a pan, bake for an hour and then you're ready to enjoy.

Ingredients are as follows:  

2 C flour
3/4 C sugar
1 Tbsp. baking soda 
1/4 tsp. salt
1/2 C butter, melted
2 eggs
1 C sour cream 
2 tsp. vanilla
6-8 ounces fresh blackberries


Directions:  

Preheat oven to 350 degrees; grease a 9 x 5 inch pan.


Mix together the flour, sugar, baking soda, and salt; set aside.

Whisk together the melted butter, eggs, sour cream and vanilla.

Mix the wet ingredients into the dry, however do not over mix!

Gently fold in the blackberries.

Pour into prepared pan.

Bake for 55-60 minutes; until a toothpick in the center comes out clean.  Allow to cool in the pan for 10 minutes, remove and cool completely.
