This low carb version of a mug cake is simple to prepare, has a hint of cinnamon,
and only takes a minute or two to cook so it's ready in no time for you to enjoy!
My kids love making things for me, so with Mother's Day coming up we came up with a recipe that not only they can make, but all the kids out there can too! It doesn't require any baking, only a few ingredients, and it's also healthy. If you'd prefer not to use cinnamon you can always add in some cocoa powder and it's quite delicious too. Either way, every kid can make their mom a special treat on her special day...enjoy!
Ingredients are as follows:
1 tsp. coconut oil
2 tsp. sugar substitute
1 Tbsp. egg whites
2 Tbsp. greek yogurt
1/4 tsp. vanilla
1/4 C almond flour
1/8 tsp. baking powder
dash of cinnamon
1/4 C heavy whipping cream
dash of vanilla
dash of sugar substitute
Get your favorite mug ready!
In your mug add the coconut oil, sugar substitute, egg whites, greek yogurt, vanilla and stir until smooth.
Add the almond flour, baking powder, and cinnamon.
Mix everything until completely combined.
Place in the microwave and heat for 90 seconds or up to two minutes; set aside to cool.
While it's cooling, whip the heavy whipping cream, a dash of vanilla, and a dash of sugar substitute until stiff peaks form.
Place a big dollop onto the top of the cake, and sprinkle on some cinnamon.
Serve and enjoy!
