Apple & Flax Seed Muffins


Mornings can be hectic in our house so I like to prep ahead of time.  If the kids can't sit down for breakfast, I like them to have something they can grab on their way out the door, and these Apple & Flax Seed Muffins are perfect.  They are packed full of apples, pecans, and flax seed which starts their day the right way!

Ingredients are as follows: 

1  1/4 C Carrington Farms Organic Milled Flax Seed (my favorite)
2 tsp. baking powder
1 Tbsp. cinnamon
1 tsp. nutmeg
1/2 tsp. salt
3/4 C sugar, or sweetener
4 large eggs
1/4 C oil
1/2 C apple juice, or water
1 Tbsp. vanilla
1 medium apple, chopped fairly finely
1/2 C chopped pecans 



Directions: 

Preheat oven to 350 F; grease a 12-muffin tin very well.


  1. Mix the dry ingredients together.
  2. Add the rest of the ingredients to the dry.
  3. Let batter stand 10 minutes, then put into the muffin pan.
  4.  Bake for about 18 minutes; until toothpick comes out clean and muffins just barely start to pull away from the sides.
  5. Allow to cool before serving.
