If you ever need a quick and easy dessert, this is the one! It starts with a simple sugar cookie dough that's filled with cream cheese and marshmallow fluff! Top it off with strawberries or whatever fruit you like. This is a great go-to dessert!

1/2 C butter, softened
1 C sugar
1 egg
1 tsp. vanilla
1 1/2 C flour
1 tsp. baking powder
1/4 tsp. salt
Filling:
8 ounces cream cheese, softened
1 (7.5 ounce) container Marshmallow Fluff
1 tsp. vanilla
1 C Strawberries (or whatever fruit you prefer)
Directions:
Preheat oven to 350 degrees.

Cream together the butter and sugar.
Add the egg and vanilla; cream an additional minute.
Add flour, baking powder and salt; Mix until combined.
Press dough into an ungreased 10 inch glass pie pan.
Place a sheet of foil over dough, then fill with rice or dried beans. (Don't worry, you can reuse these, they are just holding the dough in place!)
Bake in preheated oven for 23-25 minutes or until golden brown. Remove from oven. Carefully remove the rice and foil; set aside to cool.
While the crust is cooling, cream together the cream cheese, marshmallow fluff and vanilla.
Pour into the cooled crust and garnish with strawberries.
Slice, serve and enjoy!
