The other day I was looking through one my cookbooks when I came across a recipe for Lemon Brownies. The recipe uses a cake mix and also has a layer of cream cheese on top! As you all know, anything with cream cheese has my attention. I really didn't want to make lemon so I decided to use a Red Velvet cake mix since I've never bought one before. This recipe is very simple and I'm sure with all the cake mix flavors out there the possibilities are endless!
Ingredients are as follows:

Brownie layer:
1 box of Red Velvet Cake mix
1/2 C butter, softened
1 egg
Cream cheese layer:
8 ounces of cream cheese, softened
1 egg
2 1/2 C powdered sugar
1 tsp. vanillaMix the cake mix, butter and egg together.
This will be very thick. (You can add a dash of water to make mixing easier if need be.)
Press mixture into the bottom of the prepared pan; set aside.
Cream together the cream cheese, egg, powdered sugar and vanilla.
Pour this over the cake mixture.
Slice, serve and enjoy!

DeleteThanks so much for the recipe! I was looking for a recipe for Red Velvet Cake brownies using a cake mix(had one in the pantry) and this fit the bill. Added 1/4c water, otherwise my mix was too dry. Came out delicious!
