My kids love peanut butter cookies! I was looking for a different kind so when I saw the recipe for the ones that didn't call for any flour I knew I wanted to try it. However, I wanted to do something different with the dough. I divided the dough, added in some cocoa and tucked a little treasure inside. They are pretty sweet, but the kids didn't mind at all!
1 C sugar
1 C creamy peanut butter
1 egg
2 Tbsp. cocoa
14 "mini" peanut butter cups
Directions:
Preheat oven to 350 degrees; grease a non-stick cookie sheet.
Place sugar, creamy peanut butter and egg into a bowl.
Mix until you get a creamy dough.
Remove 1/2 cup of dough and place into another bowl; add the cocoa.
Mix until combined.
Take 1 tsp. of dough and flatten it out into a circle.
Place one "mini" peanut butter cup on top.
Wrap the dough around the peanut butter cup to form a ball.
Continue to roll all the balls then set aside.
Take about a tablespoon of peanut butter dough and flatten it in the palm of your hand. Place a chocolate ball in the center.
Wrap the chocolate ball up with the dough until completely covered.
Place onto the greased cookie sheet. Repeat with remaining dough.
Bake in preheated oven for 10-12 minutes; until golden brown. Allow to cool for 2 minutes before removing from the cookie sheet.
Take a bite and enjoy!
Please note: the peanut butter dough is sticky! Make sure you're working with clean hands then you should have no problem. If you have any peanut butter dough left over just roll that up to make plain cookies.
