Mornings can be hectic in our house so I like to prep ahead of time. If the kids can't sit down for breakfast, I like them to have something they can grab on their way out the door, and these Apple & Flax Seed Muffins are perfect. They are packed full of apples, pecans, and flax seed which starts their day the right way!
Ingredients are as follows:
1 1/4 C Carrington Farms Organic Milled Flax Seed (my favorite)
2 tsp. baking powder
1 Tbsp. cinnamon
1 tsp. nutmeg
1/2 tsp. salt
3/4 C sugar, or sweetener
4 large eggs
1/4 C oil
1/2 C apple juice, or water
1 Tbsp. vanilla
1 medium apple, chopped fairly finely
1/2 C chopped pecans
Directions:
Preheat oven to 350 F; grease a 12-muffin tin very well.
- Mix the dry
ingredients together.
- Add the rest of the ingredients to the dry.
- Let batter stand 10
minutes, then put into the muffin pan.
- Bake for about 18 minutes;
until toothpick comes out clean and muffins just barely start to pull
away from the sides.
