I make sugar cookies a lot at our house. We love to frost ours with cream cheese frosting and they're usually decorated by four kids :) So when I saw these cupcake liners and picks I knew I wanted to whip up a batch, but wasn't sure what flavor to make. Being that we love sugar cookies, I decided to make sugar cookie cupcakes!
Ingredients are as follows:
Batter:
1 C sugar
1/2 C butter
2 eggs
1 Tbsp. vanilla
1 1/2 C flour
1 1/2 tsp. baking powder
1/8 tsp. salt
3/4 C half-n-half
Frosting:
12 ounces cream cheese, softened
1/4 C butter, softened
2 tsp. vanilla
2 C powdered sugar
Directions:
Preheat oven to 350 degrees; line your cupcake pan with wrappers.
Cream together the sugar and butter (I did mine for about 10 minutes).
Whisk in one egg.
Add the other egg and mix until fluffy.
Mix in the vanilla, flour, baking powder and salt (it will be very thick).
Evenly divide batter into twelve liners.
For the frosting: Cream together the cream cheese, butter and vanilla.
Add the powdered sugar and mix until nice and fluffy.
Frost the cupcakes and enjoy!
I was fortunate enough to be contacted by Bake-A-Box, a wonderful company that specializes in boxes for the baking community. One side of the insert fits cupcakes from mini to standard, then if you flip the insert over that side can fit a standard to jumbo size. Plus you can put two different sizes in one box!

They are so simple to assemble too. They come in one piece; you just unfold them and pop in the insert and you're ready to go. My six year old put mine together for me!

Hi :) Half-n-half is half cream and milk...if you can't find it you could just use milk and it will work out fine!
