I was thrilled when I was told that I would get the chance to review the new Gooseberry Patch Quick & Easy Christmas Cookbook! Not only is it filled with over 220 recipes, but also simple decorating ideas and gifts. This past week I made two recipes and today I made the creamy rice pudding that is made in your crockpot! How simple is that? It turned out quite well and I love that I didn't really have to mess with it too much!
9 C whole milk
1 C long-cooking rice, uncooked
1/8 tsp. salt
1 C plus 1 tsp. sugar, divided
3 eggs
1 T. vanilla
1 C raisins, cooked
*I didn't cook my raisins, I just tossed them in with the milk, rice and salt
*I didn't cook my raisins, I just tossed them in with the milk, rice and salt
Directions:
Combine milk, rice and salt (and raisins) in a slow cooker. Cover and cook on high for 2 1/2 - 3 hours. Stir every hour.
After rice is cooked, stir in 1 C of sugar.
In a bowl, beat together eggs, 1 tsp. sugar and vanilla.
Stir into the rice mixture; fold in the cooked raisins (if you didn't previously). Cover and cook an additional 5 to 10 minutes, until heated thoroughly.
Serve some up and enjoy!
