I think scones are one of the most versatile recipes. I love that you can add your favorite ingredient and put your own twist on it too! When I saw this recipe in The Christmas Table, from Gooseberry Patch, I knew I wanted to try it. This is a simple recipe where you get to choose what you'd like to add. You can add chocolate chips (like I did), raisins, cherries, etc...the possibilities are endless! The Christmas Table is the latest cookbook from Gooseberry Patch and yet again it is wonderful. It's filled with so many amazing recipes, little tidbits of holiday traditions, ways to decorate and the lovely clip art too! They have graciously offered one of you a chance to win one and I've thrown in a little something too. Make sure you enter the contest below!
Ingredients are as follows:
3 C flour
1/3 C sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3/4 C cold butter, sliced
1 C buttermilk
1 C optional ingredient, (chocolate chips, raisins, dates, dried apricots, cherries)
Directions:
Stir together the flour, sugar, baking powder, baking soda, and salt.
Add sliced butter and mix until crumbly.
By hand, mix in the buttermilk & optional ingredient.
Pour out onto a floured surface.
Knead the dough until it comes together, then roll out to 1/2" thick.
Cut into wedges and place onto an ungreased cookie sheet.
Allow the dough to rest while you preheat the oven to 425 degrees. Bake for 10-12 minutes; until golden brown. Cool on a wire rack.
Take a bite and enjoy!

There are so many wonderful desserts associated with the holidays that it is difficult to chose only one! Growing up, my mom's pecan pie was one of the things that made the holidays special! She has been gone for 9 years but I have wonderful memories of her in the kitchen mixing up all those goodies for us to eat!

ReplyDeleteEveryone in my family loves the creamcheese ball that we make with our own smoked salmon! Even the picky little nieces and nephews gobble it down! :)

ReplyDeleteMy favorite Christmas dessert is my White Chocolate Chip cookies with Craisins (and I am generous with the chips). My friends, family and neighbors look forward to them every Christmas. When I saw your Scone recipe, I decided to add the White Chocolate Chips and Craisins to it. I just finished them a little while ago and the are delicious and so beautiful with the red Craisins! I am going to wrap some up with a Christmas card and give them to everyone this year in place of the cookies. I'm sure they will be a big hit! Thanks for the Scone recipe. Merry Christas!

She is in heaven now but there are so many memories of her baking so many sweet things and especially that nut cake. I love my Mom's Ginger Snap cookies dipped in melted butterscotch chips. They have been a stable at Christmas time for years. I have lost my copy of the recipe so been trying to contact her today to get it again. Because we live 3 provinces away from each other I won't be getting any this year. I have to bake my own! This recipe is definitely a tradition for our family. Merry Christmas to all.
