English Toffee Cookie Bars

This is my favorite time of year...I love all the leaves changing, the chilly weather, it's the perfect season to bake and I love all the comfort foods that you get to make.  I'm always looking for new recipes and the perfect cookbook to get me started is Hometown Harvest from Gooseberry Patch.  This book is filled with recipes, tips and warm fall memories.  You have Hometown Pancake Breakfast, Church Social Soup Supper, Thanksgiving Dinner to Remember, Game Day Get- Together, Pumpkin Patch Sweets, Slow-Cooker Potluck Pleasers, and Over the River & Through the Woods.  The last section is filled with stories and memories from people around the world.  I really enjoyed reading the traditions that everyone shared.   




I've been whipping up quite a few recipes, but the one that stood out the most are these bars.  I make homemade toffee all the time and couldn't believe you could make them into bars.  Well let me tell you...they are so simple to make and taste divine.  I can't wait to make them again!

Ingredients are as follows: 

1 C butter, softened
1 C brown sugar
1 egg yolk
1 tsp. vanilla
2 C all-purpose flour
8 (1 1/2 oz.) milk chocolate candy bars (I used 1 C chocolate chips)
1 C chopped walnuts


Directions:

Preheat oven to 350 degrees.


Cream together the butter and brown sugar.


Add the egg yolk and vanilla; stir to combine.


Mix in the flour.


Pat the dough into an ungreased 15 x 10" cookie sheet.  (I have to say, this dough was quite sticky, however I found that if I wet my hands a little it made spreading the dough a lot easier!)

 
Bake for 18-20 minutes; until lightly brown around the edges.



Remove from oven and immediately pour on the chocolate chips.


Wait a few minutes then evenly spread over the bars.


Sprinkle on the chopped nuts.


Slice, serve and enjoy!

  34. My favorite fall recipe is pecan pumpkin pie. An upside down traditional pumpkinish pie, without a crust, yellow cake mix, butter and pecans. Topped with a caramel drizzle and homemade whipped topping. Caramel drizzle can be substituted with maple syrup.

  103. I also love my Grama's Homemade Vegetable soup. It's simple, hamburger, bouillon (since I don't have beef bones), barley, green beans, tomatoes and rotel, worcestershire and celery seed, then when it's about an hour from dinner time, shred carrots and potatoes and let them cook. serve with louisiana red hot sauce and soda crackers with butter :)

  121. one of my favorite Fall recipes is Pumpkin Chicken Chili! I wasn't sure about trying it but boy am I glad I did- it is amazing! The pumpkin really balances out the spices in the chili and the chili is creamier with the pureed pumpkin! Also, the chicken is a fun twist and suits the chili much better than ground beef would, at least that's what I think!
