Mexican Wedding Cookies


 

I love simple recipes and these cookies are as simple as can be; you take five ingredients and turn them into something delicious.  The first time I made them they went so fast that I had to make another batch the next day!  These would make a great addition to your holiday baking...or anytime of year.

Ingredients are as follows:

1 cup butter, softened 
1 tsp. vanilla
1/2 C powdered sugar
1/4 tsp. salt
2 C all-purpose flour

powdered sugar (to roll the cookies in)


Directions:

Preheat oven to 400 degrees.



Whip the butter and vanilla together.

  
Gradually mix in the powdered sugar; mix in the salt and flour.


Pinch off small pieces of dough; place on ungreased cookie sheet.


Bake for 11-13 minutes; slightly brown around the edges.


Immediately remove from cookie sheet and cool on a wire rack.


Before serving, roll in powdered sugar.


Take a bite and enjoy!

  2. I make cookies similar to these, except mine have finely chopped pecans in them. They are one of my favorite Christmas cookies!! Also I roll them in the powdered sugar as soon as they come out of the oven and again after they are completely cool...

  4. All the bakers in my family have been making these cookies for years, also with the chopped pecans. I make them both ways - love them! To me, they're basically shortbread. Thanks for posting this timeless classic recipe.

  5. This may sound silly but....do you use salted or unsalted butter? :-)

    1. The recipe calls for unsalted, however you can use salted; you would just omit the salt in the recipe then ;)

  7. any kind of nuts, coconut, dried cranberries.... any of these can be added...
    even a chocolate chip hidden in the middle.
    I've made these for over 40 years and ALWAYS delicious!
    I've even had friends say their gift of a dozen never made it home ...all eaten in the car !
    Very delicious!

  8. I know the recipe calls for all-purpose flour. Could I substitute that with self-rising? I know to omit salt
