We've been making a lot of cookies lately!  This time we whipped up a batch of Oatmeal Raisin; they have a little crunch on the outside, but soft and chewy on the inside.  You'll love the simplicity of these cookies and you most likely have everything in your pantry.  I don't like my cookies to have a strong cinnamon flavor so I only added a little, however you can add more if you prefer.  These only take a few steps to make and they bake up in a matter of minutes.  They're especially good when they're still warm from the oven!

Oatmeal Raisin Snack Bars with Vanilla Glaze

I love a good cup of tea in the evening and I like to have a little treat to go with it too!  Something that's not real sweet and not that hard to make.  These Oatmeal Raisin Snack Bars are the perfect accompaniment!  They start off with oats, raisins and brown sugar, and I decided to use the new I Can't Believe It's Not Butter!® Spread in them too.  I Can't Believe It's Not Butter is made from real ingredients, like a blend of plant-based oils, purified water and a pinch of salt.  I love how it tastes like real butter, but less calories and less saturated fat.  It's spreadable straight out of the refrigerator, so there's no need to wait for it to soften which makes this recipe come together quite quickly.  I only used two bowls and mixed everything by hand.  I decided to add a vanilla glaze which seeps down into the bars making them scrumptious.  You can enjoy these bars as a late night snack, with your morning cup of coffee or any time of day!

I absolutely love cornbread, however I'll be honest...I've tried making it from scratch and for some reason it never tastes that good.  Thankfully there are mixes that help me out and I actually like the convenience of a mix.  Recently I tried the new Fleischmann's Simply Homemade Cornbread Mix (which is made with more corn then the leading brand) and I must say...it is divine!  It's moist, delicious and has a touch of sweetness that goes perfectly with that delicious corn flavor.  This is made-from-scratch quality without all the work.  It was so easy to make and in half an hour it was sitting on the dinner table.

I love being able to whip up a quick bread for breakfast or dessert.  They're always a snap to make, they taste delicious and they're done in no time at all.  I had some apples that were in the fridge and also an opened box of raisins so I decided to combine the two and make it into a moist and delicious apple cinnamon raisin quick bread.  If you'd like, you could also toss in some walnuts or pecans, but my kids don't like nuts in their bread so I decided against it, but I'm sure it would be a nice addition!  This bread can be mixed together by hand and in one bowl...simple and delicious!
