No-Bake Mini Greek Yogurt Cheesecakes

It was our 21st anniversary the other day and I wanted to make my husband something special, but didn't want to turn the oven on.  He loves cheesecake so I came up with this simple recipe that doesn't require any baking!  All you have to do is mix a few ingredients together, place it in the freezer to set up and then enjoy.  I made mine with crushed oreo's and vanilla greek yogurt, but you can choose whatever flavors you like.  How about a shortbread crust with strawberry cheesecake yogurt; oreo crust with cherry yogurt, graham cracker crust with boston cream pie yogurt...the possibilities are endless and I can't wait to try them all!  If you try something different please come back and let me know in the comments, I'd love to hear your creation!

How to Make Easy Strawberry Shortcakes with Greek Yogurt

Shortbread is one of our favorites and Strawberry Shortbread Trifle is a favorite dessert of ours.  However, sometimes I don't need to make a big trifle so I like to make these cute little strawberry shortcakes.  I love to top them off with greek yogurt because it's delicious, simple and good for you too!  I then slice up some strawberries and mix them with a little bit of preserves to make them glisten for the perfect topping...simple to make and delicious to eat!

Fruit & Yogurt Smoothie

I was recently asked if I eat dessert all the time.  Well, during the week I follow a lower carb diet and leave the decadent desserts for the weekend...that's my free time where I do a little indulging!  So what do I treat myself to during the week?  A high protein fruit and yogurt smoothie!  It's my go-to dessert because it satisfies my sweet tooth, it's healthy and I can whip it up in no time at all.  I like to use Chobani greek yogurt for the high protein and make my own juice because I know it's 100%.  Even though this recipe calls for apple juice I've used all kinds of different fruits (even veggies).  I love this recipe and my kids ask for it all the time too.  It's a delicious way to get added protein, fruit and even veggies into our diet!

Paximathia




Paximathia, or Aunt Emmy's Greek Cinnamon Twice Baked Cookies are simple and delicious!  Recently I met a wonderful lady named Elizabeth via the internet.  Her and her sister finished their cookbook and wanted to know if I would share it on my Facebook page and of course I was more than happy to help.  She was so grateful that she sent me a copy of the book!
