What's in your lunchbox?

Well it's back to school and that means a lot of lunches that I'll be packing!  My littlest one packs his lunch every day and I'm always looking for healthy new products to try.  His favorite cookies are fig newtons; I know, it's crazy for a seven year old, but he loves them!  Trying to find "healthy" ones is a task so most of the time I make them myself...until now!

White Chocolate, Raspberry & Cream Cheese Coffee Cake

I've been wanting to make a dessert with white chocolate and raspberry for quite some time, but wasn't sure what to do.  I was going to make cupcakes, a cake, then muffins, but none of them were exactly what I wanted.  Then it finally hit me to make a coffee cake.  I love coffee cakes because you can add a combination of different flavors, they're easy to make, and they look pretty too!

Everyone knows I have a love (obsession)  of cream cheese!  I could put it on everything and as you can see I make a lot of desserts with it!  In this recipe, I decided to put the cream cheese not only in the dough, but inside with the raspberry preserves and the icing on top! The dough is rich, buttery and has a hint of cream cheese while the inside is slightly sweet from the preserves and creamy from the cream cheese.  This recipe comes together quickly and in a little bit of time you can have a delicious pastry for dessert, breakfast...or anytime!
