Pineapple Delight Pound Cake

My family loves pineapple and pound cakes so I decided to combine the two and make one delicious Pineapple Delight Pound Cake.   I make this on the holidays because after cooking all day, I like to have a dessert that doesn't require a lot of time or a lot of ingredients.   Being that I start out with a Sara Lee® All Butter Pound Cake  this dessert comes together quite quickly, and can even be made ahead of time and put in the fridge until after dinner.

My favorite cake is my cream cheese pound cake!  It's so simple, and the taste is so delicious.  It has been one of the most popular recipes on the site and several people requested a lemon one.  Instead of making it with cream cheese I decided to opt for sour cream.  I think it brings that extra tang to it!  I did make a lemon glaze for it, however half of the family likes it with it while the other half preferred it without.  I like it without because I like the simplicity of the cake...a rich and delicious pound cake with a hint of lemon.   I'll put it on the recipe and you can decide for yourself if you want to make it or not...enjoy!

Chocolate Sour Cream Pound Cake





One of the easiest and most delicious cakes I make is my Cream Cheese Pound Cake.  You can whip up in no time and no matter where you take it, everyone loves it!  I shared the recipe the other day and everyone said they would like to see a similar one made with chocolate and sour cream.  Who am I to argue...so I got right to work.  This cake turned out dense, heavy and has a rich chocolate flavor.  I added in a handful of chocolate chips to take it over the edge, however you can always leave them out.  I hope you enjoy both recipes!

Sugar-Free Apricot Pound Cake



Some of my readers ask about how they can convert a recipe of mine to diabetic friendly.  I try to help them out as best as I can, but I do always wonder how it turns out.  So I decided to make a sugar-free recipe just for you!  This bread is dense and I'm thinking it's because of the sugar substitute; this is the first time I used that much in a recipe.  However, I loved it because I love pound cakes, the kids ate it and never mentioned about it tasting any different from my other recipes.  If you have any diabetic friendly recipes that you'd like to share, please let me know!

I don't think I'll ever get sick of pound cakes, they're the perfect cake!  I think one of the reasons why I like them so much is because you can whip one up in no time, no special ingredients are needed and no icing is either.  Plus the end result is always a luscious cake that goes well with anything!  I had a can of coconut milk and I had no idea why I even bought it, but I figured since I had it, I better use it.  The end result...a coconut pound cake with a lime glaze and toasted coated.  This cake was great the first day, but as it sat overnight it became more dense and that's the way I like it!

Our third featured recipe from Gooseberry Patch's newest cookbook: Simple Shortcut Recipes is Strawberry Coconut Pound Cake.  You start with a strawberry cake mix, add in some other ingredients, mix them up (in one bowl) and in less than an hour you're done.  Not only do you have a delicious cake, but a beautiful one too.  I love the vibrant  pink color of this cake!  In the cookbook it even states that it doubles as a centerpiece since it's so pretty!  I love doing reviews for Gooseberry Patch and I'm very grateful that they allow me to do them.  So to show my appreciation I like to give away a little gift to go along with the cookbook.  Since I love coffee, I decided to buy a pack of coffee pot holders, a coffee tea towel, and a set of coffee dish rags.

I love pound cake!  My favorite recipe is cream cheese pound cake and that's what I was going to make until I looked into the fridge and found out that I didn't have any cream cheese...yikes!  So I took the basic pound cake ingredients and swapped out the cream cheese for some buttermilk and sour cream.  To go with the buttermilk theme, I topped it off with some delicious buttermilk syrup.  This cake is dense, not too sweet and the syrup...well let's just say you'll have a hard time not eating it straight from the bowl!
