Summer is in full swing and I love all the fresh fruit in season!  My family loves strawberries, blueberries, and blackberries so I made this quick and easy Sugar-Free Berry Cheesecake Salad.  It's sugar-free and made with fresh whipped cream...no frozen whipped topping! It's creamy, delicious, and oh so good.  This is the perfect dessert on a hot summer day which the whole family will enjoy!

I make a lot of desserts doing this blog and I'm always interested in trying different ingredients; when SweetLeaf asked if I'd like to try their new SugarLeaf® I was happy to say yes!  SugarLeaf® is a sugar substitute made from stevia and cane sugar that is three times as sweet as sugar, however it has 2/3 fewer calories than sugar.   I like to bake with sugar substitutes, but it has to be a good one, and SugarLeaf® is just that!  It doesn't leave a bitter taste, it bakes up beautifully, and there is no aftertaste at all.

Recently I was asked if I could make a sugar-free and lower carb dessert.  I'll be honest, I haven't experimented a lot with sugar substitutes so I'm not familiar with them.  I decided to make this strawberry "no-pretzel" dessert because there isn't a lot of sugar substitute in it and you only bake the crust so I knew I couldn't mess that up!  I omitted the pretzels and replaced them with pecans & almonds to make the perfect crust.  The filling is made with splenda, sugar-free jello, real whipped cream and it's all wrapped into one delicious dessert!

Mayonnaise & Pudding Cupcakes...any flavor you want!




Cupcakes are always a hit and it's one of my favorite treats to make!  The other day I wanted to make some, however I don't have cake mixes on hand and I ran out of oil and only had a little bit of butter...yikes!  So I started experimenting and boy am I glad I did.  I came up with a recipe that is so easy, you normally have all the ingredients at home and you can make them any flavor you want!  What's the secret?  You add sugar-free pudding mix and mayonnaise.  These cupcakes came out so moist and delicious.  I've made them twice already and I love them plain, but the kids like icing on top, so any way you eat them they are sure to please.  I hope you enjoy!

Sugar-Free Apricot Pound Cake



Some of my readers ask about how they can convert a recipe of mine to diabetic friendly.  I try to help them out as best as I can, but I do always wonder how it turns out.  So I decided to make a sugar-free recipe just for you!  This bread is dense and I'm thinking it's because of the sugar substitute; this is the first time I used that much in a recipe.  However, I loved it because I love pound cakes, the kids ate it and never mentioned about it tasting any different from my other recipes.  If you have any diabetic friendly recipes that you'd like to share, please let me know!
