I like to make quick breads a lot!  They're simple to make, they take no time to bake, and they always turn out delicious.  This Strawberry Sour Cream Bread is made with strawberry preserves so you don't have to worry about having fruit on hand, and if by chance you don't have strawberry preserves, any flavor will do!  Having the addition of sour cream makes this bread moist and adds a little tang.  All the other ingredients you'll be able to find in your pantry so you can whip this bread up anytime you want.  Having a good quick bread recipe is perfect for those last minute parties or guests!

In the mood for cake, but realize you're out of eggs or butter?  That happened to me the other day and then I remembered a recipe from my eighth grade home-ec class called Wacky Cake (or depression cake).  My daughter wanted to help bake this so we tried to make it as simple as possible; we changed a few ingredients and mixed it in the pan.  Believe me, you can't get any easier then this!  It uses ingredients found in your pantry and bakes up in half an hour.  I'm really surprised that I had forgotten about this for so many years, but no need to worry, it'll be on our dessert menu quite often and I hope it's on yours too!

My husband loves coconut so he's always asking me to make something with it.  I love pineapple so I thought the two would make a perfect combination.  This recipe doesn't call for any butter or oil, however the addition of the pineapple juice makes the cake moist and dense.  I topped it off with a cream cheese frosting that I added while the cake was still warm so it seeps down into the cake as well.  Then sprinkle on some toasted coconut for a pretty garnish.  This cake uses everyday ingredients found in your pantry and you can mix it up in one bowl.  This is definitely a simple and delicious cake!

Let me forewarn you...this Banana Toffee Poke Cake with Browned Butter Frosting and Toffee Bits is addicting; it's so moist and so delicious!  I had bananas that were pretty ripe and didn't want banana bread or bars so I decided to come up with a new recipe.  I wrote down a few ideas, combined them, asked my son what sounded good to him and this is what we came up with.  This is a scratch cake made with bananas and toffee bits, then we poked some holes into it so the delicious Browned Butter Frosting would ooze all down through the cake.  To top it off we sprinkled on some toffee bits.  The flavors came together perfectly, it's not too sweet and it is beyond moist and delicious.  If you have any leftovers you'll need to keep them in the fridge or the cake will get too wet and the toffee bits will melt since it's so warm out.  This cake is perfect for breakfast, brunch or dessert!

Easy Homemade Puff Pastry from Scratch




Every time I go to the store I look for puff pastry, however they never have it.  I started reading about how to make it from scratch and the "classic" recipe seemed to take a lot of work and timeSo I kept looking and then I found this recipe from King Arthur Flour that sounded so easy and it didn't take all day either!  I tweaked it a little, gave it a try and I'm so happy that I did.  It turned out wonderful and it was so simple to make.  Plus the end result is so flaky and buttery!  Once you try this, you'll never go back to store bought again!  It was early morning so I decided to fill mine with cream cheese and strawberry preserves... like a toaster strudel.  I'm looking forward to trying it with so many other fillings too!
