The long days of summer are filled with backyard games, swimming, biking, water parks, and so much more!  The kids play from the time they get up until I tell them it's time to come in and eat dinner.  After dinner they get their showers while I make a light, refreshing, and wholesome after dinner snack.  With Yoplait® yogurt and all the abundant fresh fruit I like to make parfaits with crunchy granola.

It was our 21st anniversary the other day and I wanted to make my husband something special, but didn't want to turn the oven on.  He loves cheesecake so I came up with this simple recipe that doesn't require any baking!  All you have to do is mix a few ingredients together, place it in the freezer to set up and then enjoy.  I made mine with crushed oreo's and vanilla greek yogurt, but you can choose whatever flavors you like.  How about a shortbread crust with strawberry cheesecake yogurt; oreo crust with cherry yogurt, graham cracker crust with boston cream pie yogurt...the possibilities are endless and I can't wait to try them all!  If you try something different please come back and let me know in the comments, I'd love to hear your creation!

Shortbread is one of our favorites and Strawberry Shortbread Trifle is a favorite dessert of ours.  However, sometimes I don't need to make a big trifle so I like to make these cute little strawberry shortcakes.  I love to top them off with greek yogurt because it's delicious, simple and good for you too!  I then slice up some strawberries and mix them with a little bit of preserves to make them glisten for the perfect topping...simple to make and delicious to eat!

Yulu ~ Aussie Style Yogurt

My family loves yogurt!  We eat it everyday; sometimes for breakfast, other times as a snack and we even freeze it for a dessert!  I normally buy greek yogurt because it's high in protein, but sometimes the kids say it's too tangy.  We recently tried Yulu and it is extra creamy, double-smoothed and double delicious.  Yulu is an Australian style yogurt, but made in the USA.   It's not tangy at all and it packs 9 grams of protein into each cup.  So good bye greek, hello Yulu!

Fruit & Yogurt Smoothie

I was recently asked if I eat dessert all the time.  Well, during the week I follow a lower carb diet and leave the decadent desserts for the weekend...that's my free time where I do a little indulging!  So what do I treat myself to during the week?  A high protein fruit and yogurt smoothie!  It's my go-to dessert because it satisfies my sweet tooth, it's healthy and I can whip it up in no time at all.  I like to use Chobani greek yogurt for the high protein and make my own juice because I know it's 100%.  Even though this recipe calls for apple juice I've used all kinds of different fruits (even veggies).  I love this recipe and my kids ask for it all the time too.  It's a delicious way to get added protein, fruit and even veggies into our diet!

Lemon Blueberry Poke Cake

I'm a big fan of poke cakes!  I love how an additional flavor gets seeped into an already moist and delicious cake.  It just takes the flavors up another notch.  I'm always trying to come up with different flavors and with blueberries being in season I thought it would be great to use those and add some lemon juice too.  I then made a lemon glaze and poured that into the holes while the cake was still warm...perfect!  This is a delicious breakfast cake or a great accompaniment to afternoon tea!

Baked Yogurt Donuts


 

I finally got a donut pan this Christmas and I am so excited!  My family loves donuts, however I don't make them at home because I don't fry our food.  I tried the recipe on the package, however it wasn't the texture my husband wanted.  I got to work and came up with one that is a little dense, has a nice crumb texture and it's delicious.  What I love about my recipe is that it uses yogurt so you can make them any flavor you want, you're adding in some protein, and they are so simple to make!  If you don't have a donut pan you could always make them in a mini muffin pan.
