The warm weather has finally arrived and I love making refreshing drinks with Sparkling Ice -  a great tasting, lightly carbonated, zero-calorie beverage which combines sparkling water, fruit juice, vitamins, antioxidants, and natural flavors.  Normally I make them for the kids, but I decided to try something different and make an adult beverage this time.  It turned out delicious, it's so simple to prepare, and it's the perfect way to end the day!

One of our favorite desserts is Apple Pizza because it's an easy recipe to prepare and it tastes delicious too!  My kids could eat it every day, and as much as I would like to let them, I don't.  I decided to come up with an alternative for us to enjoy the delicious taste of fruit pizza, but on the lighter side.

I love having Sunday brunch!  I make a big meal for us, we sit, we talk, we make memories and it's something I hope the kids will remember forever.  Once we're done I like to refill our tea/coffee and then have something a little sweet to round out the meal.  It has to be something that's easy, delicious, and can be made while I'm making the other food too.

Fruit & Yogurt Smoothie

I was recently asked if I eat dessert all the time.  Well, during the week I follow a lower carb diet and leave the decadent desserts for the weekend...that's my free time where I do a little indulging!  So what do I treat myself to during the week?  A high protein fruit and yogurt smoothie!  It's my go-to dessert because it satisfies my sweet tooth, it's healthy and I can whip it up in no time at all.  I like to use Chobani greek yogurt for the high protein and make my own juice because I know it's 100%.  Even though this recipe calls for apple juice I've used all kinds of different fruits (even veggies).  I love this recipe and my kids ask for it all the time too.  It's a delicious way to get added protein, fruit and even veggies into our diet!

I still had a chunk of squash to use up from my 13.6 pounder that my dad gave me and I wanted to make another dessert...I must say this is delicious!  If you don't have squash or you don't care to use it, you can swap it out for apples or peaches and it would be just as divine.  I love a good crumb topping so I not only put it on the top, but I also put some on the bottom to form a crust.  I love how this turned out and you can't even tell it's squash; my family thought it was peaches.  Some of us had it plain, some added a drizzle of cream on top while others had it in a bowl with milk...anyway you try it, it's scrumptious!

My dad gave me a squash...not just any squash; a squash that weighed 13.6 pounds!  He grows them every year although he's not quite sure what kind they are.  They're somewhat like a zucchini, but they really don't have any seeds, they're light orange inside and green on the outside.  I was eager to try it so I got right to work!  The first recipe I made I just chopped some up, added some sausage and cheese then baked it in the oven...nothing special, but that's what my daughter wanted.  I wanted more of a stuffed style so I cut a chuck off, filled it with chicken, bacon and gouda...scrumptious!  Then I made two desserts and froze the rest.  This Squash Crostata is a simple recipe, it tastes delicious and it's a great way to sneak some veggies into your diet.  Honestly, I never told my family it was squash in the desserts.  They tried it, thought it was fruit and I left it at that...if you don't tell, I won't either!

The Best (and simplest) Fruit Dip ever!



I love seeing all the fresh strawberries at the stores and I also love the price!  Whenever they go this low I usually stock up on quite a few pints.  The kids love to eat them plain, on top of yogurt, in smoothies, on pancakes, and especially with dip.  This Fruit Dip is so simple to make and you only need a few ingredients...which I usually have on hand all the time.  Not only will you love the taste, but how easy this is to make and take to all your summer picnics and parties...enjoy!

Not Your Grandma's Ambrosia Salad

I love quick and simple desserts, and this one couldn't be simpler!  Our family loves fruit salad and once they tried ambrosia salad they liked the concept, not the marshmallows.  My family doesn't care for marshmallows in dessert salads so I came with my own recipe.  There's only five ingredients so you could even consider this one of those Five Cup Salads!  This makes a large batch which is perfect for my family, however you can always use the smaller cans of fruit and it will be creamier...which we sometimes do too!

Brown Sugar (Shortbread) Fruit Pizza



Fruit pizzas are usually made with a sugar cookie crust, but I honestly don't care for it. What I do care for is shortbread!  I love the rich buttery taste, how flaky it is and how it melts in your mouth.  My recipe has brown sugar in the shortbread and the cream cheese making this a decadent dessert.  It's very simple to make and you can top it off with whatever fruit you have on hand.  Drizzle a little extra icing on top and you have a quick, easy  and delicious dessert...I hope you enjoy!
