Summer is in full swing and I love all the fresh fruit in season!  My family loves strawberries, blueberries, and blackberries so I made this quick and easy Sugar-Free Berry Cheesecake Salad.  It's sugar-free and made with fresh whipped cream...no frozen whipped topping! It's creamy, delicious, and oh so good.  This is the perfect dessert on a hot summer day which the whole family will enjoy!

Muffins are a favorite of mine because you can literally make them in so many flavors; they are portable and portioned controlled!  When I saw this recipe for Buttermilk Blueberry Banana Bread, I knew I had to make it, but into muffins.  I love adding buttermilk into my recipes because it adds a slight tartness and so much moisture.  Plus the combination of blueberries and banana was very inviting.  I did lower the sugar being that I was making them for a neighbor who isn't allowed a lot of sugar, and even so, they turned out amazing!  I can't wait to make a few batches of these and store them in the freezer for a quick breakfast...enjoy!

 I'm a mom who loves to do special things for the kids no matter what the occasion, holiday or event it is.  I want the kids to have wonderful memories of home and I hope they'll carry on the traditions to their families too.  One of our favorite traditions is to have Sunday brunch with lots of scrumptious food, good conversation, and an all around great time.  I always make it special with a nice tablecloth, pretty napkins, fancy dishes, and a favorite food for each family member to enjoy!

Lemon Blueberry Poke Cake

I'm a big fan of poke cakes!  I love how an additional flavor gets seeped into an already moist and delicious cake.  It just takes the flavors up another notch.  I'm always trying to come up with different flavors and with blueberries being in season I thought it would be great to use those and add some lemon juice too.  I then made a lemon glaze and poured that into the holes while the cake was still warm...perfect!  This is a delicious breakfast cake or a great accompaniment to afternoon tea!

Brown Sugar (Shortbread) Fruit Pizza



Fruit pizzas are usually made with a sugar cookie crust, but I honestly don't care for it. What I do care for is shortbread!  I love the rich buttery taste, how flaky it is and how it melts in your mouth.  My recipe has brown sugar in the shortbread and the cream cheese making this a decadent dessert.  It's very simple to make and you can top it off with whatever fruit you have on hand.  Drizzle a little extra icing on top and you have a quick, easy  and delicious dessert...I hope you enjoy!

Vanilla Cream Cake




To celebrate the 4th of July I decided to make a red, white & blue cake.  This cake is a cross between a sponge and pound cake.  It's airy, but a little dense too (if that makes sense!)The icing is a vanilla buttercream; I make mine with half-n-half and I love the creamy taste that comes through.  I also don't use a lot of sugar because I don't want the sweetness to overpower the cake.  To go with the red, white & blue theme I used strawberries and blueberries!  This is a delicious, quick and easy cake to take to all your picnics this holiday...enjoy!

Blueberries and Cream Cake


 

When I saw fresh blueberries at the store I knew it was time for dessert! I love blueberries and I thought what better way then to pair them up with my old favorite cream cheese! This cake is deliciously moist, not too sweet and simple to prepare.  I garnished it with some cream cheese icing and a handful of fresh blueberries. It is to die for!
