The weather has been pretty hot, which I'm not complaining, but I try not to turn on the oven as much now.  Even so, that doesn't mean we have to do without dessert!  So I love making no-bake desserts that are not only easy, but delicious.  This Creamy Peanut Butter Fudge is made in the microwave and comes together in a matter of minutes.  Plus it doesn't require any marshmallows or fluff so you most likely have everything in your pantry right now.  Once you sink your teeth into this you'll see and taste how creamy and scrumptious it is...enjoy!

I recently made my own version of Earthquake Cakes and I'm so happy how they turned out.  It started with a Red Velvet Earthquake Cake then a Pumpkin Earthquake Cake and now this Chocolate Fudge Earthquake Cake.  They are so simple to make and so delicious!  The combination of sweetened cream cheese, butter, chocolate chips and coconut go together perfectly then it's swirled into a rich chocolate fudge mix and baked into one beautiful cake!

Double-the-Fun Fudge





It's time once again to review a new cookbook from Gooseberry Patch and this one is a treat!  The cookbooks from Gooseberry Patch are filled with delicious recipes from people all over the world, however this one has some cattitude and it's filled with Garfield's favorite dishes.  We have Breakfast is served...Time to get up!; First lunch, then a catnap; Snack Attack; Lotsa Lasagna, Pasta & Pizza; It's time for dinner...Now!!! and Dinner is over...What's for dessert?  This cookbook has over 230 recipes, a few comic strips and lots of tips & tricks...all with Garfield's Cattitude! I couldn't wait to start cooking, I've made several dishes and they all turned out wonderful.  The recipe I featured today is the perfect treat for a hot summer day!

Chocolate Yule Log


 

Happy holidays to you all!  Chocolate Yule Log is a quick and simple dessert that looks lovely!  This recipe can be made in less than an hour...just in case you need a last minute dessert!  The chocolate frosting on the outside is thick and fudgy while the white creamy frosting inside is silky and smooth.  A perfect combination all rolled into a lightly sweetened sponge cake.

Chocolate Fudge Pie

 

Last Saturday I featured the Gooseberry Patch Quick & Easy Christmas Cookbook.  I made the Hot Milk Cake, today I'm making the Chocolate Fudge Pie and this coming Saturday I'll be featuring another recipe too!  This cookbook is filled with so many wonderful recipes and I love the Christmas memories that go along with them too.  

This chocolate fudge pie is different from any other pie I've had.  It has a nice chocolate flavor, it's somewhat dense, it has a silky smooth texture and it's not too sweet.  Plus I love that it uses ingredients that I always have on hand. It would be the perfect pie to take along for the holidays!
