It's apple season!  Fall is the perfect time to make a variety of apple desserts, and these Baked Granola Apples definitely caught my eye.  They are made with Viki's Granola Apple Cinnamon – which is a blend of gluten-free oats, organic honey, unsweetened coconut, and mixed with dried sweetened apples, raisins and a sprinkle of cinnamon.  You can serve these for breakfast or dessert!

Fall is here and the weather has actually been chilly the past few days.  So to warm me up I made some Crisp Apple Donuts!  A little crispy on the outside and flaky on the inside, and dipped in a cinnamon sugar mix.  These are made with a unique ingredient and they're the perfect way to treat yourself to a delicious dessert, breakfast or brunch...enjoy!

If you have never made an earthquake cake, you're missing out.  I was recently introduced to them and boy am I glad I was.  I made a Red Velvet one, a Chocolate Fudge one and now this pumpkin one.  I love how the cream cheese is gooey and seeps into the batter while the butterscotch chips melt perfectly into it too.  This cake is quite simple to make, but doesn't skimp on taste.  If you're looking for a quick, easy and delicious dessert to make this season then you'll definitely want to try this one!

Apple Cake Roll

I'm always looking for easy recipes and when I was looking through an old cookbook the other day a very unique recipe jumped out at me.  It starts out by shredding apples and applying them directly to a lined cookie sheet.  Then a light and fluffy batter is made and poured over the apples. Once you bake it the apples remain on the bottom and you roll the cake up with the apples inside.  I made this twice, once with regular sugar and once with a sugar substitute; they both tasted the same.  I love how this comes together quickly, it's not that sweet and it doesn't require any frosting!

Caramel Apple Dumpling Dessert

My family loves apple dumplings, but sometimes it gets to be a pain making all of them.  I came up with a way to enjoy all the flavors without all the work.  I also wanted the recipe to be quick and easy so I decided to use canned crescent rolls.  This dessert tastes exactly like individual apple dumplings, but you'll be able to enjoy them in no time at all!

Caramel Apple Bread Pudding



 
 
The other day a friend asked if I had any recipes for bread pudding; I didn't and I was surprised that I hadn't made this before.  I'm not fond of soggy desserts so I'm sure this was part of the reason.  I decided I would give it a try, but I wanted to make one that uses simple ingredients that we all have on hand and it couldn't turn out soggy!  Since it's Fall I decided to turn it into a seasonal dish by adding some apples and a warm caramel sauce.  It turned out perfect and I look forward to making this a lot more!
