Baked Brown Sugar & Apple Cinnamon Oatmeal


My oldest son loves this Baked Brown Sugar and Apple Cinnamon Oatmeal!  He was home on Spring break and I must have made it four times that week.  The flavor combination is so good, and it's so easy to make too.  You toss everything into one baking dish, mix it up, bake for awhile and then drizzle on some cream.  Believe me, the cream is the finishing touch to this recipe!

We've been making a lot of cookies lately!  This time we whipped up a batch of Oatmeal Raisin; they have a little crunch on the outside, but soft and chewy on the inside.  You'll love the simplicity of these cookies and you most likely have everything in your pantry.  I don't like my cookies to have a strong cinnamon flavor so I only added a little, however you can add more if you prefer.  These only take a few steps to make and they bake up in a matter of minutes.  They're especially good when they're still warm from the oven!

Every year it seems like I have pumpkin leftover.  I normally make pumpkin roll, but this year my daughter asked if I could make something different so I came up with this delicious Pumpkin Custard with Oatmeal Crumb and Cream Cheese Topping!  This is such a simple dessert and it only takes a few standard ingredients that you most likely have at home.  For the topping I made an oatmeal crumb and added a dollop of sweetened cream cheese.  You could also add whipped topping or even vanilla ice cream...simple & delicious!

Oatmeal Raisin Snack Bars with Vanilla Glaze

I love a good cup of tea in the evening and I like to have a little treat to go with it too!  Something that's not real sweet and not that hard to make.  These Oatmeal Raisin Snack Bars are the perfect accompaniment!  They start off with oats, raisins and brown sugar, and I decided to use the new I Can't Believe It's Not Butter!® Spread in them too.  I Can't Believe It's Not Butter is made from real ingredients, like a blend of plant-based oils, purified water and a pinch of salt.  I love how it tastes like real butter, but less calories and less saturated fat.  It's spreadable straight out of the refrigerator, so there's no need to wait for it to soften which makes this recipe come together quite quickly.  I only used two bowls and mixed everything by hand.  I decided to add a vanilla glaze which seeps down into the bars making them scrumptious.  You can enjoy these bars as a late night snack, with your morning cup of coffee or any time of day!

Apple Oatmeal Cookies




You all know Make Ahead Meals for Busy Moms, and if you don't...you need to stop over and take a look!  The recipes are perfect for any occasion, there are reviews and lots of giveaways!  One cookie that is quite scrumptious are these Apple Oatmeal Cookies...they are very moist and have just the right amount of sweetness.  You can add chocolate chips or raisins, but I think they’re flavorful enough without them!  With 1 cup of shredded apple and 2 cups of oatmeal, you almost don’t feel guilty eating them!  I hope you enjoy!

Don't you love it when you think something is going to turn out bad, but turns out fine...if not better!  That's exactly what happened with this cake.  I started out making this into bars, however once I put together the ingredients and realized I was out of brown sugar, I knew it wasn't going to turn out the way I wanted.  However, I continued on and actually am very happy with the way it turned out!  I don't want to call it a bar because once I cut into it and took a bite, it started to crumble!  Now it's a Strawberry Crumble that you should eat on a plate instead of your hands ;)  It's easy to prepare and it turned out delicious!

Whatever you like Pie!


This pie is made with oatmeal and coconut, however what's unique is that you can add in whatever you like.  Yes, you heard me right... whatever you like!  You could choose white chocolate, dark chocolate, milk chocolate, walnuts, pecans, raisins, cranberries, whatever your favorite is, just toss it in and enjoy.  I'd love to hear what you would choose, so let me know!

Oatmeal & Peanut Butter Filled Cookie Tarts

 


This is my recipe for peanut butter and oatmeal cookies that our family loves!  I've been making it for years and it never fails me. However today I wanted to do something different with it. So I made them into a tart, filled them with a creamy peanut butter center and drizzled chocolate on top! The creamy center adds a wonderful touch and of course so does the chocolate.  These would be great to make if you needed a dessert to take to a party because they're simple to make and they look so cute!

"Instant Flavored Oatmeal" Bread


Some how, even with four kids, I always end up with one flavor of Instant Oatmeal that no one wants. Either the kids aren't in the mood for that flavor or they just don't like it!  After lots of trial and error, I finally came up with a recipe that utilizes all those leftover packets! This is a very simple and quick bread that's moist and delicious!
