Mayonnaise & Pudding Cupcakes...any flavor you want!




Cupcakes are always a hit and it's one of my favorite treats to make!  The other day I wanted to make some, however I don't have cake mixes on hand and I ran out of oil and only had a little bit of butter...yikes!  So I started experimenting and boy am I glad I did.  I came up with a recipe that is so easy, you normally have all the ingredients at home and you can make them any flavor you want!  What's the secret?  You add sugar-free pudding mix and mayonnaise.  These cupcakes came out so moist and delicious.  I've made them twice already and I love them plain, but the kids like icing on top, so any way you eat them they are sure to please.  I hope you enjoy!

Carrot Cake Tarts with Cream Cheese Frosting



Easter is upon us and I know everyone is looking for quick & easy desserts!  These carrot & cream cheese tarts start out with a cake mix, add a few ingredients, top with icing and you're ready to enjoy!  I decided to make these like my cake mix brownies so they are a little on the thicker/denser side.  I love desserts like that, however if you don't, you could always make the cake mix according to the package directions so they'll be lighter; more like a cupcake.  Either way these are sure to please!

Chocolate Avocado Cupcakes with Peanut Butter Icing

I love Avocados from Mexico!  I love to eat them plain, make guacamole, cut them up and toss them into a salad, put it on a sandwich...you get the point!  It doesn't matter how often I eat it, I never get tired of it.  I love the creamy consistency and buttery taste that seems to go with everything!  I got to thinking and realized that I never baked with avocado.  I read up on it and it states that you can substitute avocados for butter.  So I took one of my chocolate cupcake recipes and put it to the test.  As far as the taste, you can't tell the difference.  As far as texture, it's a little different.  I topped them off with some peanut butter icing, gave them to the kids and they were gone in no time at all!

The Best of 2012



This time of year I like to count down the top 10 recipes on Flour Me With Love.  The recipe that was viewed the most this year is my Apple Fritter BreadIf you like apple fritters, but don't like to deep fry, then this bread is the perfect solution.  It has the taste and texture of an apple fritter without all the guilt!  The rest of the recipes are all delicious too.

Strawberry & Cream Cheese Coffee Cake Cupcakes



I have to admit...I love coffee cakes!  I wanted to make one the other day and my daughter also requested cupcakes.  Since I didn't want to make two different desserts, I decided to make Coffee Cake Cupcakes.  They came out wonderful!  I love that you can share this dessert and you don't have to worry about cutting it into individual servings.  These would make a wonderful addition to brunch, a tea party, or actually any occasion.  I can't wait to make these with different flavored preserves!

Sugar Cookie Cupcakes


I make sugar cookies a lot at our house.  We love to frost ours with cream cheese frosting and they're usually decorated by four kids :) So when I saw these cupcake liners and picks I knew I wanted to whip up a batch, but wasn't sure what flavor to make.  Being that we love sugar cookies, I decided to make sugar cookie cupcakes!

Strawberry Cupcakes with Cheesecake Filling

 

There are so many cupcake recipes out there, however I wanted to try and come up with a new one.  I made a strawberry cupcake then filled it with a cheesecake center and topped it off with a  strawberry-cream cheese frosting and some colored sugar.  So simple, but oh so good!
